FoodOxys – Α Spin-off of the University of Thessaly

FoodOxys is an innovative biotechnology company and a spin-off of the University of Thessaly, based in Larissa, Greece. The company emerged from the long-term research activity of the Laboratory of Animal Physiology at the Department of Biochemistry and Biotechnology, under the scientific guidance of Professor Demetrios Kouretas. A significant share of the company is held by graduates of the Department of Biochemistry and Biotechnology, strengthening FoodOxys’ close connection with the academic community and applied innovation.

Following international trends in precision medicine and personalized nutrition, the company provides cutting-edge services supporting personalized nutrition and wellness, while also offering scientific documentation of the bioactivity of food products and dietary supplements. The scientific activity supporting this transition is reflected in more than 350 publications in international scientific journals in the fields of oxidative stress, metabolic health and nutritional biochemistry, as well as in more than 50 collaborations with companies in the agri-food sector.

The company’s trajectory has been recognized both scientifically and entrepreneurially: from its first year of operation, it received funding from Uni.Fund; since 2021 it has been a member of Elevate Greece; and it was distinguished as “HealthTech Company of the Year” at the Startupper Awards 2025.

 

 

FoodOxys focuses its activity on two complementary pillars:

 

(A) Services for individuals: evaluation of antioxidant and genetic profile

FoodOxys supports a personalized nutritional approach through biomarkers related to redox balance and antioxidant defense, as well as through genetic markers and DNA analysis. Antioxidant defense constitutes a key cellular protection mechanism against oxidative stress, which is associated with processes of aging, inflammation, and metabolic burden. In this context, the company provides specialized analyses such as MyGlutathione (determination of reduced glutathione – GSH), as well as comprehensive evaluation approaches such as RedoxOne and RedoxOne Pro, which capture the current biological status of the organism and can support targeted nutritional interventions.

At the same time, FoodOxys offers genetic tests for cardiometabolic prevention, physical activity, nutrition, and metabolism (FoodOxys DNA Test Kits), which are based on the principles of nutrigenetics and evaluate selected genetic markers. These tests include NutriGene, FitGene, and CardioGene, and the genetic analysis is carried out in collaboration with the Laboratory of Genetics, Comparative and Evolutionary Biology of the Department of Biochemistry and Biotechnology at the University of Thessaly, under the scientific supervision of Professor of Population Genetics Dr. Zissis Mamouris.

The combined evaluation of genetic and antioxidant profiles provides a more comprehensive picture: DNA functions as a stable biological map that does not change over time, whereas antioxidant defense markers constitute a “dynamic measurement” of the organism’s current functional status. Thus, this combination links genetic predisposition with the present biological condition and allows monitoring and re-evaluation over time.

 

(B) Services for food products and dietary supplements: documentation of bioactivity and added value

For food companies, FoodOxys provides specialized biochemical evaluation services aimed at scientifically documenting the nutritional value and biological activity of products. This field includes services such as PhenOxScan (quantitative determination of polyphenols and antioxidant capacity assays), NutriMetrics (linking laboratory analyses with the European regulatory framework for health claim substantiation), OleoMetrics (comprehensive evaluation of olive oil quality and bioactive composition), as well as Product ID (bioactivity evaluation using cellular models and, when required, human clinical studies).

A particularly important component is the European certification mark AFQ – Activity FoodOxys Quality, which introduces an innovative, scientifically documented system for evaluating, comparing, and ranking the quality of food products based on their bioactivity.

Finally, FoodOxys operates with an international orientation toward quality and compliance. The company is certified according to ISO 9001:2025 and complies with Ministerial Decision 4822/2025 for the implementation of good distribution practices for medical devices.
